On the Lighter Side

On the lighter side..
 
It's been too hot to cook. Yet needing some nourishment to keep one going. I put together this salad of sorts, rather tasty we enjoy it.
 
So easy, so refreshing and the right balance of flavors for our palate.
 
Cantaloupe cut in thin chunks, imitation crab legs, the one with zero fats, no this and no that yet nice flavor, also cut in pieces, and add some goat cheese . One night I had shrimp instead of crab, the precooked kind, defrost in cold water, drain and that's a done deal.
 
Last night I put in the center of the plate an assortment of grains/rice,
I also love to serve this with a side little dish of fresh squeezed lemon. Cut up some fresh herbs to top.
